Bright and fresh with notes of red fruits and strawberries.
Sourced from their estate vineyard in the western edge of the Upper Galilee at 800m ASL. Soils are composed of a gravelly flint (silex) clay. De-stemmed and then gentle crushed directly into the press. Press performed at a very low pressure to produce delicate, free-run juice. Natural fermentation at 18C. Aged 6 months on fine lees in concrete and stainless steel.
