A bulbille is a young bud, in which Claire Richaud uses to make fresh wines in a warm climate, resulting in a spunky blend in sandy soils. These soils, which soften the tannins are helped along by semi-carbonic maceration, creating a wine with wild strawberries, raspberries, red roses and red cherry. None of the tart acidity usually accompanied with these red fruits shows up in the final wine.
